ABOUT THIS COFFEE

This coffee grown by Diofanor Ruiz at the farm La divisa. This coffee was exposed to a dry aerobic fermentation of 24 hours before being placed inside grainpro bags for 50 ours at a temperature below 22 degrees. Then the whole cherries were placed on raised beds untill 11% moisture content was achieved. This micro-lot is 100% Pink Bourbon. This varietal is currently under research to determine its origin. It is said that it is a mutation that took place at 2100masl in San Adolfo, Huilia.
