El Danto is a beautiful estate located in Santa Barbara, Honduras. Most of this land is used to grow varietal Parainema. This varietal has dwarf plant but large seeds. You will see this when you open the bag. The owner of El Danto is Carlos Madrid. He and his family have been producing coffee for generations and Carlos grew up with coffees surrounded. Taking this farm from his mother, Carlos keeps elevating the flavour profile by using anaerobic fermentation. Anaerobic washed coffee gives a clean citrus aroma and pineapple acidity, which is very different from many wine like anaerobic offers.
