NB - This is a Colombian coffee and there is a typo on the card.
This Coffee was picked and transported the same day to La Pradera (cofinet’s processing station). This lot was exposed to a dry anaerobic fermentation for 48 hours, during this fermentation cinnamon was added to infuse.
Later the coffee was placed on raised beds below 35 degrees celsius until the ideal moisture content was achieved. This microt lot is 100% Caturra. This varietal actually originated at Minas Gerais, Brazil. It is a natural mutation of the of the Red bourbon Varietal.

For that reason they only roast coffees that are sourced in an ethical, transparent and responsible manner. They go to lengths to ensure all players in the supply chain are remunerated fairly and have access to the same knowledge - most pertinently those in producing countries, who are currently benefiting the least from trade and simultaneously bearing the most risk.
