This washed anerobic natural Colombian produced by Jairo Arcilla is an extremely unique coffee. In the cup we are tasting Chocolate mud cake with a lime acidity, floral, zesty aromas with a bittersweet mouthfeel (like cocoa powder). A very unique and must try rare coffee.

This coffee was grown by Jairo Arcila at the farm Santa MoĢnica. This coffee was carefully hand-picked in order to select only the ripest cherries. Later, the cherries were fermented for 40 hours in an anaerobic environment. Then the cherries were pulped, gently washed, and sundried until ideal moisture content was achieved.

This micro-lot is 100% Pink Bourbon.

This varietal is currently under research in order to determine its origin. It is said that it is a mutation that took place at 2100 m.a.s.l in San Adolfo, Huila.
